Countice Roy of Baldwin, Louisiana is releasing a collection of her favorite recipes in a book called "Food Frenzy."

 The former chef and manager of Catering by Countice has put together a Volume of 241 recipes "that have highlighted both my professional career and a lifetime of passionate food preparation at home," she said.

"The book covers a broad spectrum of recipes from  "The Perfect Boiled Egg" to "Classic Lasagna" to "Elegant Prime Rib" with a world of great dishes in between."

Catering by Countice was in business about 12 years, tending to functions ranging from intimate private dinners for two, holiday family gatherings, wedding receptions, family reunions, banquets and cocktail parties, sometimes with dinners for 1,000. 

One of the recipes in the book is Custard Filled Cream Puffs that she began making for her grandfather at age nine. 

"Cooking for me started as an early childhood desire," Roy said. "I was infatuated as a youngster with cookbooks and recipes. The infatuation continued as I grew older and I began experimenting on a higher level. Being in the retail food industry I was able to begin slowly with party trays and deli type items as I self taught along the way. It was not long after, that I had an overwhelming request from my customers to open a full service Catering business. So, I went in for the challenge and found it quite rewarding."

Roy said she was encouraged by her children, Adrienne and Clint, to create the book. "As they grow older they have begun to express a deep appreciation for the foods they have seen me prepare at  home and on the business trail for many years," she said.  "I was fortunate through the years to have been chosen as a caterer and consultant for numerous events held at the Louisiana Governor's Mansion in Baton Rouge.  That has truly been a highlight in my career."

Other recipes include Italian Sausage and Roasted Red Pepper Fettuccini, Chicken Alfredo Lasagna, Broccoli Stuffed Tomatoes and Overstuffed-Stuffed Potatoes.
